Alternative Pikelet Recipe

Pikelets are one of my favorite camping foods. Simple ingredients, easy to prepare, fun for everyone to cook and a pleasure to eat.
Perfect for breakfast, afternoon tea or as a snack with a late night coffee.
I usually like to serve with butter and marmalade or jam but try a savory topping with cheese as an alternative.

  • 2 1/2 cup plain flour
  • 5 tsp baking powder (fresh)
  • 2 medium eggs
  • 1 1/2 cups milk
  • 4 tbsp sugar or sugar alternative
  • 4 tsp melted butter
  • 1 tsp vanilla extract


  • Combine the flour, baking powder and sugar in a medium mixing bowl.
  • Make a well in the dry flour mix and crack the eggs and the vanilla extract in to it.
  • Slowly poor in the milk and at the same time continue to whisk the mixture. You should end up with a batter that is consistent and not to runny.
  • Wipe a little oil on to a non-stick skillet and heat over medium-high heat. Avoid to much oil as this spoils the finish.
  • Place about two tablespoons of batter into the skillet and cook until bubbles appear on the surface. Flip and cook the other side until it's a nice golden brown color.
  • Depending on the size of your skillet you can cook more than one at a time just make sure they don't start to merge. It can make it difficult to flip.
  • Serve warm with your choice of toppings.


If you want a savory topping perhaps best to leave out the vanilla.
We have other similar recipes on the website that use self raising flour. Whether you do this or use baking powder make sure it’s reasonably fresh or you may be disappointed with the bubbles.
