Campfire Chilaquiles

Classic Mexican dish that you can make your own by adding different veggies and other ingredients like eggs. Approved by Jon my Mexican amigo.

  • Dutch Oven or deep skillet
  • Campfire, BBQ or camp stove.



  • 1 bag tortilla chips
  • 1 8 oz. can enchilada sauce home made recipe see Recipe Notes.
  • 1/4 cup feta cheese
  • 3 medium eggs


  • 1 cup roasted corn
  • 1 cup cooked ground beef
  • 1 lime, juiced
  • ½ tsp sea salt for taste
  • ½ tsp black pepper
  • diced green chilies optional


  • Crumbled feta cheese or cotija (if you can find it)
  • Cilantro, roughly chopped
  • Lime slices
  • Your favorite hot sauce


  • Start by mixing all the filling ingredients. Toss the mixture lime juice, salt and pepper. If you like it hot now's the time to add the green chilies.
  • Wipe olive oil around the inside of a Dutch Oven and it's now time to layer filling and other ingredients.
  • Start with a layer of corn tortillas followed by 1/3 of the filling mixture, 1/3 cheese followed by plenty of the enchilada sauce. Repeat until you fill the container.
  • Sprinkle more feta on the top before making indentations in the top of the mix for the eggs. Crack open the eggs and carefully put them in their bed. Season with a little extra salt and black pepper.
  • Put on a lid or cover with aluminum foil.
  • Cooking time depends on how hot your fire is. Usually somewhere between 15 and 30 minutes.
  • Everything should be ready when the egg whites are cooked and the egg yolk still a little runny.
  • Now it's time to enjoy with or without any of the additional ingredients.

When it comes to the filling don’t be afraid to experiment with alternative meats and veggies.
As with all the recipes on this site ingredients should be readily available from Walmart, Costco or your local supermarket. No chasing around multiple specialist food out lets.
