  • 2 tbsp olive oil
  • 1 large onion , chopped
  • cups chopped and peeled carrot
  • 1 stalk celery , chopped
  • 2 garlic cloves , minced
  • salt and pepper for taste
  • 1 red bell pepper , chopped
  • 1 jalapeno , finely chopped
  • 1 lb finely diced smoked tofu
  • 1 tbsp chili seasoning
  • 1 can of crushed tomatoes
  • ¾ cups regular milk
  • cups macaroni pasta
  • ½ cups finely chopped cilantro
  • 2 cups swizz cheese , shredded


  • Using a large pot, cook the onions in oil over medium-low heat until soft. This should take about 5 – 6 minutes.
  • Add carrots, celery, and garlic together with salt and black pepper for a further 7 -8 minutes to soften the vegetables.
  • Now add the red bell pepper, jalapeno, diced smoked tofu, and chili seasoning. Mix and cook for another 5-6 minutes.
  • Finally, add the tomatoes and milk, bring everything to a boil, and then simmer for 15 minutes.
  • The macaroni is cooked in a pot of boiling salted water. Add the macaroni and cook for a couple of minutes before draining.
  • Add the macaroni pasta, cilantro, and cheese to the chili stew and stir until the cheese is melted.
