Dad’s Campfire Beef Stew

What's not to love about a beef stew? Filling and especially welcome when Winter camping. This stew can be made in advance, we cooked this one at home in a Dutch oven, and it's easy to reheat over a campfire or camp stove.
It's easy to cook from scratch over a campfire. Prepare everything in advance, and it's just a case of adding everything to a cast iron Dutch oven. Everyone will appreciate the aroma as it cooks. The only problem is that it'll make everyone hungry, so make sure there's enough.
Chunky bread is an excellent addition with the added benefit that wiping up the juices will cut down on haveing to wash the plates!

  • Cast iron Dutch oven


  • 1 tbsp olive oil
  • 1 pound beef stew meat or pulled pork
  • 1 onion cut into chunks
  • 1 gloves minced garlic
  • salt and pepper to taste
  • 1 tbsp tomato paste
  • 1 tbsp all-purpose flour
  • 1 ⅓ cups vegetable stock
  • 2 Red Potatoes cut into chunks
  • 2 carrots cut into chunks
