Dorset Apple Cake

  • 1/2 lb all-purpose flour (unbleached)
  • Pinch salt
  • 4 oz butter or margarine
  • 1 1/2 tsps baking powder
  • 4 oz brown or white sugar
  • 1 egg
  • 1/2 lb cooking apples, peeled, cored and finely chopped
  • 1-2 tbsps milk
  • Pinch mixed spice
  • 2 tbsps dried fruit


  • Rub the fat into the flour and salt to make a crumble mixture then add baking powder.
  • Thoroughly mix the apples, sugar, mixed spices and dried fruit before adding this to the flour mixture.
  • Stir in the beaten egg and milk to make a firm dough mixture.
  • To make it look like a proper cake use a round 8-9" flat cake tin. Alternatively, I like to bake this in a one pound loaf tin.
  • Bake for about 45 minutes at 350 F. The top should be golden brown.


Using a bread tin makes it easier to slice and freeze or pack for a hike or bike ride. For a picnic I’d keep the round shape, it just looks better.
This cake keep well when frozen.
If you can cut the cake when it’s still warm and spread salted butter for a special taste.
