Campfire Breakfast Sandwich

A great simple and easy recipe for a good old classic breakfast sandwich.

  • 4 english muffins you can use any bun you wish to use
  • 2 cups leftover pulled pork
  • 4 medium eggs
  • 4 slices Old Cheddar Cheese also try grated cheese
  • Butter to crisp up the muffins


  • In the cast iron skillet melt butter and brown the English muffins. Put them to one side.
  • Cook the pulled pork and set to one side.
  • Fry the eggs.
  • The next step is to wrap the filled English muffin in foil ready to place over the fire. Tear off sufficient aluminum foil to wrap the muffin.
  • Fill the muffin with leftover pulled pork, a fried egg, and slice of cheese or some grated cheese. Now finish wrapping the filled muffin.
  • Place the wrapped muffin over the fire until the cheese is melted.


Don’t be afraid to experiment with different cheeses. But, please just try to refrain from using the Cheddar cheese slices that feel like rubber. There are so many better options.
If you want to get fancy try adding sliced tomatoes, caramelized onions or sauerkraut.
If you are vegetarian or just fancy an alternative to meat try some of the plant based sausage or bacon alternatives.
