Easy Chickpea Mushroom Curry

  • 1 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 4 cup mushrooms
  • 3 cup chickpea (canned)
  • 2 tbsp tomato paste
  • cup full fat coconut cream (canned)
  • 1 cup veggie broth
  • 1 tsp sweet paprika powder
  • 1 tbsp garam masala
  • 1 tsp tumeric
  • 2 bay leaves
  • salt and pepper to taste


Prepare Vegetables

  • first off you will need to remove the skin from the nion and garlic
  • wash off any dirt from the mushrroms before slicing them into smaller pieaces

Making curry sauce with mushrooms and chickpeas

  • now you can heat the frying pan to meduim heat with the olive oil in it before adding the chopped onion and minced garlic
  • cook both garlic and onion for about 5 mins or until it has soften
  • then you can add the sliced mushrroms , salt and pepper . stir them with the onion and garlicfor a couple minutes
  • now add the sweet paprika and stir it in and then do the same for the tomato paste
  • now you can add the veggie broth and full-fat coconut milk and stir it in the mixture
  • next thing to do is add the rest of the psices and bring it to a boil and cook until mushrooms are soft
  • finally add the chickpeas and serve with either rice or flatebread
