Cuisine Chinese

  • 1 cup water
  • 5 tbsp brown sugar
  • 1 tbsp honey
  • 1/4 cup soy sauce
  • 1 clove finely minced garlic
  • 1/2 tsp ground ginger
  • 1/4 cup cold water
  • 2 tbsp cornstarch

  • 2-3 tbsp mirin or dry sherry

  • Mix the cup of water, sugar, soy sauce, honey, garlic and ginger in a small saucepan and heat over medium temperature.
  • Mix the cornstarch and 1/4 cup water to make a smooth paste. Slowly add to the heated main mixture until the sauce is the desired thickness.
  • Allow to cool and store in an airtight container. I like to use small mason jars.

Little Extra Option

  • Add mirin or dry sherry before adding the cornstarch mix.

Teriyaki sauce will keep in the fridge for an extended period.
If you want to get really fancy add 2-3 tbsp of mirin or substitute with dry sherry. Many recipes suggest adding a little sugar to the sherry but I think this is sweet enough. Your choice. Experiment.
