Easy Potato Soup

  • 6 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 carrots, diced
  • 4-6 slices of bacon cooked and chopped
  • ΒΌ cup butter
  • 2 cups milk
  • 1 cup water
  • salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese , plus more for topping


  • First combine all the ingredients excepet the cream and cheeseinto the dutch oven
  • Cook for about 30 minutes, or until the potatoes have softened
  • After that you can break them up with a sppon or spactulafrom time to time
  • Try using a whisk to make it smooth or leave them a bit chunky
  • Remove the dutch oven from the firepit and now stir in the heavy cream and cheese
  • At the end you can added more cheese for topping


Chopped chives, parsley or green onions all make great topping options for this hearty soup.
Finish the soup off with chunks of bread for dipping or, and this comes from my childhood, break the bread into small pieces and soak them in the soup.
