Grilled Campfire Gyro Kebabs

Gyro is a type of Greek food very similar to doner of kebabs fame. The meat can be beef, lamb or chicken and if you buy these kebabs at a restaurant it's usually cooled on a vertical rotisserie. probably not something you'll have on hand at your campsite so you'll be cooking this on a camp stove or fire.

Main ingredients

  • ½ pound lamb cut into bite sized pieces beef or chicken are alternatives.
  • ½ cup paneer cheese Halloumi is an option if you can get it.
  • 10 cherry tomatoes
  • 2 tsp olive oil
  • salt to taste
  • 4 flatbreads or large pitas

Meat Marinade

  • Dice the lamb, or meat of choice, and put this in a bowl or large zip bag along with the Gyro kebab marinade. Make sure the meat marinades for not less than an hour and preferably longer (anything up to 48 hours) Keep it in a fridge or cooler for this process.


  • A lemon yogurt sauce is a great addition to this kebab. prepare it in advance. The recipe can be found on our sauce and dip page.

Camp Cooking Instructions

  • Fire up the grill or get the campfire burning. Don't leave this to the last minute as you'll need medium-high to high heat.
  • Soak the wooden skewers in water for 20 minutes or more. It should make it easier to thread the ingredients and the skewers shouldn't burn so easily.
  • Thread the lamb, tomatoes and cheese chunks (not to small) on to your skewers. They all take different times to cook so Meat on one skewer, tomatoes on another and the cheese on a third. Brush the tomatoes and cheese with oil.
  • When the grill is hot enough place the skewers on the grate. Make sure they are turned regularly.
  • Meat should be cooked through in about 10 minutes, tomatoes should be soft and start to blister after about 4 minutes and the cheese should be soft and show grill marks after about 3 minutes.
  • The final bit of cooking is to warm the flatbreads.
  • Finally, it's time to build your Gyro. Spread the lemon yoghurt sauce on the flatbread and top with lamb, tomatoes and cheese.
