  • 4 trimmed pork chops
  • 2 pigs kidneys
  • 4 large potates , peeled and sliced
  • 2 medium onions peeled and sliced
  • salt and pepper
  • 3 medium apples peeled and sliced
  • 1 tsp sage
  • 300 ml cider or stock
  • 300 ml water


  • cut the pork chops in half and remove the bone if they have it and then remove fatty core from the kidney and then chop into small pieces
  • now place a layer of potatoes on the bottom of the casserole dish then onions , apples and seasoning
  • then a layer of chops and kidneys and the sage
  • repeat this layering but keep back so potatoes to use for the top layer that should be quite thick
  • now with all the layers done pour over the cider and water
  • now slowly cook for about 2 to 3 hours and in the last half hour take of lid to brown the top slightly
