Course Snack

  • 1 cup pumpkin seeds (shelled)
  • 1 cup roasted & shelled sunflower seeds
  • 2/3 cup dried cranberries
  • 2/3 cup golden raisins
  • 10 dried apricots chopped into small pieces
  • 1 tsp pumpkin pie spice mix
  • 1/2 cup maple syrup
  • Salt

  • 1/2 cup dairy free chocolate

  • Start out by measuring out all of your ingredients and have them close to hand when you start cooking. Helps avoid burning the mixture if everything is ready.
  • In a small pot heat the maple syrup until it just starts to bubble. Take care as you don't want to burn anything.
  • Reduce heat to med-low and add the pumpkin spice and a pinch of salt stirring all of the time.
  • Reduce heat and add the pumpkin and sunflower seeds. Stir and continue to cook for further 3-4 minutes. The aim is to thoroughly coat the seeds but not burn anything.
  • As soon as everything is covered with the syrup mix turn the contents out on to parchment paper and let it cool completely.
  • There should be a nice glaze on the seeds and you can break apart any large clumps in to bite size pieces.
  • Now it's time to put all of the other ingredients in to a bowl along with the glazed seeds and mix well.
  • Store this nut free trail mix in an airtight container.
