Rob’s Sweet & Salty Roast Trail Mix

There's something about sweet and salty snacks that are very satisfying. This one should keep you going on a hike or bike ride.

Ingredients
  

  • 3 cups almonds (raw)
  • 2 cups pecan halves
  • 1 cup pumpkin seeds
  • 1 cup sunflower seeds
  • 1 cup raisins
  • 1 cup coconut flakes
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • Salt

Instructions
 

  • Start by preheating your oven to 350°F.
  • Nice and simple mix all the ingredients together in a bowl. If the honey and coconut oil is firm (cold kitchen) then warm slightly so that it mixes better.
  • Spread the mixture evenly on a parchment lined baking tray.
  • Bake for about 15 minutes but do check after 10 minutes as each oven is a little different.
  • When cooled store in an airtight container.

Notes

If you don’t have maple syrup honey makes a great substitute.
