Course Snack

  • 1 cup raw unsalted peanuts
  • 1/2 cup raw walnuts
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw almonds
  • 1/4 cup golden raisins
  • 1 tsp olive oil
  • 1 tsp maple syrup or honey
  • 1 tbsp cajun seasoning
  • Salt

  • Preheat your oven to 325°F
  • Put the raisins to ne side for later. You don't want to be cooking them.
  • Mix all of the ingredients (not the raisins) and mix. Make sure all of the nuts and seeds are coated with a little seasoning.
  • Spread the mixture on a parchment lined baking sheet making sure they are all well spread out.
  • Bake for 15-20 minutes until golden brown
  • Good idea to toss the nuts about halfway through baking/roasting and check regularly near the end as you don't want to burn anything. Doesn't add to the taste.
  • Final step is to let everything cool completely before adding the raisins.
