Skippers Salmon Burger

Ingredients
  

  • 6 oz salmon fillets or salmon pieces (coarsley chopped)
  • 1/2 cup panko
  • 1/4 cup chopped parsley or cilantro
  • 2 tsps Dijon mustard
  • Salt and pepper to taste
  • 2 tbps mayonnaise
  • herbs and/or spices (see notes below)

Instructions
 

  • Using a food processor finish chopping the salmon before adding all of the other main ingredients
  • Check the notes below for adding extra flavor.
  • Process until the mixture looks a little like ground meat.
  • Now form the mixture into 4 equal portions and form them into burger patties about 1/2" thick. The mixture can be a little sticky so dampen your hands with cold water.
  • Heat oil in a non-stick skillet and cook both sides of the salmon burger for 3-4 minutes over low to medium heat

Notes

Panko is a Japanese style of breadcrumb. If you have ordinary breadcrumbs in your freezer, it would be worth trying them as an alternative.
Good quality salmon should have enough taste to satisfy without the need for any extra herbs or spices. However, if, like us, you manage to get hold of some cheap salmon trimmings, you might like to try Piri Piri, Cajun spice mix, or whatever takes your fancy. Part of the fun of cooking is experimenting.
