Smoked Tofu and Potato Foil Dinner

  • 1 1/2 cups smoked tofu, chopped.
  • 8 red potates ,chopped
  • 2 large carrots , peeled and chopped
  • 1 cup green beans
  • 1 cup whole kernel corn
  • ½ cup diced onion
  • ½ cup diced celery
  • 2 tbsp olive oil
  • salt and pepper
  • 1 tbsp cajun seasoning
  • Garlic butter sauce


  • Cut up baby potatoes into halves and boil them for 5 to 10 mins together with the diced carrots (note 1)
  • Cut up the onion, and celery add to a skillet with oil olive and just soften them.
  • Add salt and pepper for taste in the veggie mixture.
  • Return the potatoes and carrots to the same skillet and add parsley and mix all the vegetables and cook for another 10 mins or so.
  • Add the diced smoked tofu to another skillet and cook until they just turn golden brown.
  • Add the corn and green beans with the rest of the veggies and tofu to the tinfoil package along with garlic butter sauce and cajun seasoning
  • With the tinfoil package all wrapped up, cook for just about 25 minutes


Note 1 – Small baby potatoes are a fun alternative to halved larger potatoes.
