Somerset Casserole of Bacon

  • 3 lb shoulder or collar bacon
  • 2 bay leaves
  • 6 peppercorns ( fresh ground pepper)
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 1 cup carrots, sliced
  • 2 leeks sliced
  • 2 cooking apples, sliced
  • ¼ pint dry cider
  • 3 garlic cloves
  • ½ cup sultanas
  • a little cornflour (optional)


  • soak the bacon for just about 2 hours then drain
  • now place in a saucepan with the bay leaves and peppercorn cover the saucepan and let it simmer for about 30 to 40 mins on a low heat
  • now you can prepare the vegetables and apples
  • now place the sliced up onion and apples in skillet with heat up oil and sauté for about 5 mins or until they have soften
  • now you can add the vegetables to a fireproof casserole dish and place the bacon on top of them
  • add the cider and enough of the stock to barely cover , then put in the sultanas , cloves and pepper
