  • 1 cup cashews
  • 1 cup plain or salted peanuts
  • 2 cups corn cereal
  • 2 cups pretzels
  • 3-4 tbsps liquid honey
  • 3-4 tbsps Sriracha
  • 2 tbsps grape, canola or light olive oil
  • 2 tsps soy sauce
  • Salt

  • Preheat your oven to 300°F.
  • In a bowl mix the Sriracha, honey, oil and soy sauce to make your sweet and spicy coating sauce.
  • Add the corn cereal, pretzels, cashews and peanuts. Mix thoroughly to make sure everything is well coated with the sauce mix.
  • Use parchment paper on a baking tray and spread the mix to give it room to bake. Sprinkle with salt to taste.
  • Bake in the center of your oven. Timing depends on your oven but 15-18 minutes should be enough. Check after about 12 minutes and then keep an eye on how things progress.
  • Take the tray out of the oven and give the trail mix plenty of time to cool before storing in an airtight container.

I’m always a little concerned about being to prescriptive about quantities especially when it comes to spices and salt. You should know how spicy you like food so go with your instincts.
When it comes to salt you might want to hold off adding extra if you’re using salted peanuts.
