The Easiest Egg Fried Rice

Ingredients
  

  • 4 large eggs
  • 3 tbsp peanut, vegetable, or olive oil
  • 1 cup diced onion
  • 2 cups diced mixed vegetables
  • ½ cup sliced scllions
  • 4 cups cooked overnight jasmine rice
  • tbsp soy sauce
  • ½ tsp five spice powder
  • dash of black pepper
  • tsp toasted sesame oil

Instructions
 

  • Break eggs into a small bowl and beat them together.
  • In a skillet, heat up some oil and scramble the eggs for just about a min or two, then transfer them into a bowl
  • With the remaining oil, use it to saute the onions and also cook the mixed vegetables and the sliced scallions with a pinch of salt for taste
  • Add the already cooked rice into the pan and cook for several minutes, just so the rice is cooked through, and break apart any large lumps of rice.
  • Now add the soy sauce, five-spice powder, black pepper, and also seasame oil and stir to distribute the seasonings .
  • Add the scrambled eggs and stir to mix it all together
