Vegetarian Cottage Pie

Cottage pies are traditionally made with minced beef although you can use minced pork or turkey. Shepherd's pies use mutton although because this is now more difficult to find most people use minced lamb.
With this recipe we've used vegetarian mince which does tend to give a more meat like texture.

Ingredients
  

Cottage Pie Filling

  • 1 pkt (320g) veggie round mince
  • 1 medium onion finely chopped
  • 2 medium carrots chopped
  • 2 celery stalks chopped
  • 2 garlic cloves minced
  • 2 tbsp all-purpose flour
  • 1 tbsp tomato puree
  • 1 glass red wine (optional)
  • 450 ml vegetable stock
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 3 bay leaves

Mashed Potatoes

  • 4 large potatoes (exact amount depends on the size of your dish and how thick you like your potato layer)
  • 225 ml 2% milk
  • 25 g butter
  • 200 g mature cheddar

Instructions
 

Cottage Pie Filling

  • Add 2 tbsp olive oil into the pan, add the finely chopped onions, chopped carrots and chopped celery sticks. Cook on a gentle heat until soft, about 20 mins.
  • Add the minced garlic cloves, all-purpose flour and tomato purée, increase the heat and cook for a few mins.
  • Add the veggie mince. Break up the block of mince and continue to cook for a few minutes.
  • Pour over a large glass of red wine, if using, and boil to reduce it slightly before adding the 850ml vegetable stock, Worcestershire sauce, a dried thyme and bay leaves.
  • Bring to a simmer and cook, uncovered, for 45 mins. You're aiming for a thick gravy that's coating everything. Check regularly, stir and if there's still a lot of liquid turn ip the heat a little. Season well with salt and pepper then discard the bay leaves if you can find them.

Mashed Potatoes

  • In a large saucepan, cover the peeled and chopped potatoes with salted cold water, bring to the boil and simmer until tender.
  • When the potatoes are tender (easy to stick a fork in them) drain and let them air dry for few minutes.
  • Mash well with milk, butter and half the cheese.

Baking the Cottage Pie

  • Spread the pie filling into a dish and carefully spoon the mashed potato over the cottage pie filling. Top off with the remaining cheese.
  • Heat the oven to 375 F and cook for 20 – 25 minutes so that the top is golden brown
  • As an alternative don't add the cheese but bake loosely covered with aluminum foil. Then at the end remove the foil sprinkle the cheese over the pie and broil/grill until the cheese is crispy golden.

Notes

As an alternative to Worcestershire sauce, you can use Maggi, which gives a nice meaty flavor.
Aluminium foil works just as well as aluminum foil which might be difficult to get in the UK!
