Mango and Strawberry French Toast in Foil
There's always room for a little luxury no matter if you're in an RV or backcountry camping.We've used blueberries and peaches, but you can mix things up with a wide range of fruits. We find frozen fruits from supermarkets makes life easy. Just make sure they are thawed and drained before cooking.
Equipment
- Aluminum foil or aluminum foil pans
Ingredients
- 2 slices of bread, cut into cubes
- ½ cup chopped peaches
- ¼ cup blueberries
- 3 large eggs
- ½ cup milk
- 1 tsp cinnamon
- maple syrup
Instructions
- You can use aluminum foil but the aluminum foil pans make it even easier.
- Coat the inside of the aluminum foil with oil before adding the cubed bread (note 1). If you're using foil, then form it into a cup so the ingredients don't fall out
- Whisk the eggs and milk, then pour over the bread. Now add the chopped mango and strawberry. (note 2)
- Close up the package or add the pan lid before cooking on a medium-high heat over a grill or in a Dutch oven with the lid off.
- After 5 minutes, open the package and check how well it's cooking. Gently stir the contents so that the eggs cook thoroughly and to help prevent burning.
- Sprinkle with cinnamon and if you need a sugar fix serve with maple syrup.
Notes
Note 1: Any bread will work but we particularly enjoy this breakfast with cornbread or another sweet bread.
Note 2: Mixed frozen fruit blends are a great option for this recipe. Tinned fruit is also an option; make sure the fruit is well-drained. We particularly liked Blueberry and Peach.
