
Buttery Peanut Trail Mix
In my opinion you either like peanut butter or you don't. Me I love peanuts but really not a fan of peanut butter so in fairness this is not my favorite trail mix. Then again I know of peanut butter aficionados who love this Buttery Peanut Trail Mix
Ingredients
Main Ingredients
- 11/4 cups dark chocolate
- 1 tbsp coconut oil or butter
- 1/2 cup unsweetened peanut butter
- 1/2 cup stevia
- 1 tsp vanilla
- 2 cups nut mixture.
- 2 cups unsweetened coconut flakes
Instructions
- Melt the chocolate and coconut oil and mix well. Use a microwave on low power and check regularly. You can use a stove top but be very careful you don't burn the mixture. Many professional cooks melt chocolate over a water bath but honestly this is a hassle. Stick to the microwave.
- Stir in the stevia, peanut butter and vanilla.
- In a second bowl mix the nuts and coconut before pouring the chocolate mixture over the nut and coconut mixture. Stir well to make sure everything is well coated.
- Spread the mixture over a large baking sheet covered with waxed or parchment paper then place it in a refrigerator until it's very firm.
- Break up the trail mix in to manageable bit size pieces and keep in the refrigerator.
Notes
When it comes to replacing sugar with sweetener life can become a little difficult. Typically the stevia I use substitutes 1:1 for sugar. The alternative is to use brown sugar and walk a little further.
Nut Mixture
Include a selection of almonds, walnuts, pecans, peanuts or cashews. Not a nut but sunflower, hemp or pumpkin seeds are all possibilities.
