Simple Beef Stew
Ingredients
- 750 g stewing beef (shin, flank, skirt or chuck)
- 2 tbsp all-purpose flour
- 2 medium yellow onions (chopped)
- 3 medium carrots (diced)
- other root vegetables as desired
- 450 ml water
- Salt and pepper to taste
Instructions
- Cut beef into 2cm/1 in cubes then toss in the flour, salt and pepper.
- Fry briskly in hot oil until browned on all sides then remove to side plate.
- Add the vegetables to the pan and continue to toss and fry for 6 -7 minutes.
- Replace the meat and poor in the water. Slowly bring to the boil, lower heat and cover the pan.
- Simmer gently for 1 3/4 to 2 1/2 hours until meat is tender.
- Serve with roast or baked potatoes. Rice is also a good option.
Notes
If you have one this recipe works well in a slow cooker. Best of all you can use a cheap cut of meat because of the slow cooking time.
It’s more trouble, but I do enjoy serving stewed beef with cauliflower cheese.
