If you have friends with nut allergies then it’s easy to substitute extra pumpkin and sunflower seeds to replace the peanuts, almonds and walnuts.

Simple Cajun Trail Mix
Plenty of flavor in this simple Cajun coated crunchy trail mix snack. For this recipe we opted to buy a ready made Cajun seasoning from the supermarket. Makes life a little easier.
Ingredients
- 1 cup raw unsalted peanuts
- 1/2 cup raw walnuts
- 1/4 cup raw sunflower seeds
- 1/4 cup raw almonds
- 1/4 cup golden raisins
- 1 tsp olive oil
- 1 tsp maple syrup or honey
- 1 tbsp cajun seasoning
- Salt
Instructions
- Preheat your oven to 325°F
- Put the raisins to ne side for later. You don't want to be cooking them.
- Mix all of the ingredients (not the raisins) and mix. Make sure all of the nuts and seeds are coated with a little seasoning.
- Spread the mixture on a parchment lined baking sheet making sure they are all well spread out.
- Bake for 15-20 minutes until golden brown
- Good idea to toss the nuts about halfway through baking/roasting and check regularly near the end as you don't want to burn anything. Doesn't add to the taste.
- Final step is to let everything cool completely before adding the raisins.
