Tasty Black Beans and Rice

Beans and rice is a staple for people worldwide and this recipe is both tasty and nutritious. Easy to cook in the great outdoors or prepare in advance. This beans and rice recipe lends itself to being a side dish or main course for lunch or dinner. Flexible enough to be eaten hot or cold. Works nicely with a side dish like salsa or salad.

  • 1 onion
  • 1 red bell pepper
  • 1 can (15 oz) black beans
  • 1 can (14.5oz) diced tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 pinch red pepper flakes
  • 1 cube chicken seasoning
  • 1/1/2 cups rice
  • salt & pepper to taste
  • vegetable oil for cooking.


  • Dice onions and red bell pepper.
  • Heat the oil over a medium high heat. Start by cooking the onions and then add red bell pepper. Cook and stir until tender.
  • Add beans, tomatoes, chicken seasoning, oregano, red pepper flakes and garlic powder.
  • Bring to boil and then stir in rice.
  • Reduce heat and simmer until rice is cooked. Stir regularly to prevent burning.
  • Remove from the heat and leave to rest for 5 minutes. It's now ready to serve.


I’ve used this recipe with different rice options. If you’re in a hurry white or brown instant rice. I’ve found Jasmine rice to be a tasty option. Brown rice is nutty but does take longer and you’ll probably have to add a little extra water.
This recipe works well as a tasty lunch with salad or as a side dish for a main meal. If there’s any leftover it’s equally tasty cold.
Are you a spicy person? I’m not so always feel free to increase the herbs and spices to taste. Life’s an experiment.
